Arabian Mandhi Rice
without oven chicken version

This dish is divided in 4 parts
1. Mandi Masala Ingredients:
Salt 1 tsp
Coriander Seeds 1 tbsp
Black Pepper 1 tsp
Cumin 1 tsp
Ginger Powder 1 tsp
Bay Leaf 1
Turmeric Powder 1 tsp
Cinnamons 2
Green Cardamom 8
Cloves 1/2 tsp
Mace Powder 1/2 tsp
Mandi Masala Preparation:
Take a grinder jar and add Coriander Seeds, Black Pepper, Cumin, Bay Leaf, Cinnamons, Green Cardamom, Cloves and grind it well and then add Salt, Mace Powder, Ginger Powder and grind it well. Your Mandi Masala is Ready.
2. Chicken Marinate Ingredients:
Chicken Leg Piece 3
Oil 1 tbsp
Lemon Juice 1 tbsp
Mandi Masala 2 tbsp
Chicken Marinate Preparation:
Now take 3 Chicken Leg Pieces and put and spread Lemon Juice and oil and then sprinkle Mandi Masala 2 tbsp and marinate it and rest it for 15 minutes. After that steam it. I use a pot and add 4 cups water and boiled it and make it's steam and place a stand and then place this 3 Chicken Leg Pieces and cover with lid and steam it for 25 minutes on high to medium flame. After that your Mandi Chicken is cookecoo remove the chicken from the steamer now rub more masala over the steamed chicken, take a pan with lil bit oil on it and shallow fry the chicken 3-4 mins from both sides.
3. Rice Ingredients:
Rice 1/2 Kg (Soaked for 1/2 Hour)
Mandi Masala 2 tbsp
Onion 1 (Chopped)
Chicken Stock from Chicken Steam (2 Cups)
Salt 2 tsp
Raisin 2 tbsp
Roasted Almond 6 (Chopped)
Oil 1/2 Cup
Water 2 Cups
Fried Onion (Optional)
Rice Preparation:
Take a pot and add oil and add onion and fry it until it's become into light pink color and then add Raisin and stir it and then add Salt, Mandi Masala 2 tbsp, and then add Chicken Stock from Chicken Steam (2 Cups) and then add 2 cups water and boiled it on high flame and then put Soaked Rice and stir it and cook it on high flame until it's water dried. After that use very low flame and add Roasted Almond, Fried Onion and place Mandi Chicken and then place a foil and place a heated coal and put 1 drop of oil and cover with lid and cook it for 15 minutes on very low flame. After that your Chicken Mandi with Rice is Ready.
4. Dip/Chutney Ingredients:
Tomato 1 (Chopped)
Green Chilli 4 (Chopped)
Garlic 2 Cloves
Lemon Juice 1 tsp
Cumin Powder 1 tsp
Salt 1/4 tsp
Dip/Chutney Preparation:
Take a small jar and put all ingredients of Dip/Chutney instead of salt and grind it well and then add salt and mix it well. Your Dip/Chutney is Ready.
